5 Lb. Recipe

• 3 lbs. Venison & 2 Lb. Beef Chuck or 5 Lb. Beef Chuck
• 4 oz. Jalapeño Snack Sticks Seasoning
• 1 tsp. Insta Cure® #1 (If smoking)
• 1 Cup Cold Water

Grind all meat through a 3/16” grinder plate. Mix seasoning and Insta Cure® #1 in a cup of water. Add all the ingredients to the meat and mix well. Prior to stuffing, encapsulated citric acid can be added to give tangy flavor (optional). Stuff into 19mm collagen casings. Place in smokehouse preheated to 120-130°F. Apply a heavy smoke at this temperature for 3-4 hours. Raise the temperature to 165°F and cook until the internal temperature reaches 155°F. After cooking, shower with cold water until the internal temperature is at least 120°F. Place in refrigerator for at least 24 hours before eating for best results.
